I checked (after watching the season finale over again) and all of this season's Carnivale's are in fact on demand, except tonights, which should be on in a day or two.
Sometimes it's more fun to watch a series all at once, even if you haven't seen it before, because you get the story altogether, none of that weekly waiting, that can get you distracted in the mean-time.
If you liked the first season, and would love even a hint of more action in the show, you'll love the second season. It's quite intense.
